February Featured Recipe
Dark Chocolate Raspberry Oat Bars
A cozy Alaska-winter treat that’s perfect with coffee or warmed vanilla ice cream.
Ingredients
For the oat base & crumble:

1 cup unsalted butter, melted

¾ cup brown sugar

½ cup old-fashioned oats
-
1 ½ cups all-purpose flour
-
½ teaspoon baking soda
-
½ teaspoon salt
-
1 teaspoon vanilla extract
For the filling:

¾ cup raspberry preserves
-
½ cup dark chocolate chips (60–70% cacao works beautifully)
Instructions

Preheat oven to 350°F and line an 8x8 or 9x9 pan with parchment paper.

Mix melted butter and brown sugar. Stir in oats, flour, baking soda, and salt until crumbly.

Press two-thirds of the mixture into the prepared pan.

Spread raspberry preserves over the crust and sprinkle with dark chocolate chips.

Top with remaining crumble and bake for 30–35 minutes, until golden.

Let cool completely before slicing.
Pro tip: Warm slightly and serve with vanilla ice cream or a hot cup of coffee.
